Miner’s Lettuce is a salad plant which should be better known, in my opinion. It grows slowly in winter then gets larger in spring. It is a pretty and unusual looking plant. Tiny white flowers grow out of the centre of the leaves. These are edible too, so don’t be afraid to eat the leaf/ flower combination when it reaches that stage.
Planted a few in your garden, in a sunny spot, where there are gaps in winter. Leave a few to set seed in early summer and then pull out the plants when they are looking tired and other plants are taking over. In following winter you should be rewarded by the sight of many new seedlings popping up. A great, low maintenance way to grow salad leaves!
Miner’s Lettuce has a mild flavour, similar to lettuce, but with slightly fleshy leaves. It is high in Vitamins C and A and also a source of iron.
